Ingredients

  • zucchini - 1.6 lb (750 g)
  • garlic - 1 clove
  • parsley - 2 tbsp. (chopped)
  • dried dill - 1 pinch
  • black pepper - 2 pinches (or by taste)
  • corn flour - 5 tbsp. with a tip
  • eggs - 1 pc. L - XL
  • salt - by taste
  • olive oil - for sprinkling

How to make

Remove both ends of the zucchini and without peeling them, grate them on a coarse grater. Sprinkle them with a generous pinch of salt, mix them well and leave them to release their juices for about 1 hour.

Strain and squeeze all off the liquid from the zucchini. Crack the egg and add it to them, add the spices and corn flour.

Stir and if necessary, add more flour so that you can easily form patties.

With lightly greased hands, by taking from the mixture, make slightly flattened balls. Arrange them in a tray lined with baking paper.

Sprinkle each vegetable patty with olive oil.

Bake until they aquire a golden brown color in a preheated oven at 350°F (175 degrees).

Serve them warm with a quality yogurt, tomato or mayonnaise sauce.

Quick, economical and very simple patties, which are suitable for a light dinner or an appetizer to compliment your favorite drink.
