How to make
Dissolve the yeast with the sugar in the slightly warmed milk. Cover it with a towel and leave it to activate for 7-8 minutes.
Separately, beat the eggs with the yoghurt and pour them into the bowl with the foamy yeast.
Sift the flour with the salt into the liquid mixture and mix well until a homogeneous fluffy and lump free mixture is obtained.
Cover the bowl again with a towel and leave it to swell up for 30-40 minutes.
Heat a small pan with a non-stick bottom and greased with oil (moderate heat). Pour a ladle of the mixture and bake the blini until they're nicely browned on both sides.
If desired, you can spread them with melted butter after removing the finished blini from the pan. And without doing so, they will remain soft and fluffy, and the oil makes them greasy anyway, but it's still a matter of taste.
Serve them as breakfast or a dessert with a jam of your choice, honey or white cheese.
