How to cook
Beat the eggs and add the milk, oil, vanilla, 1 pinch of salt, the powdered sugar and melted butter to them. Beat it again and add the flour in 2 lots. Beat until you get a smooth mixture.
Cover it with a towel and let it sit for half an hour at room temperature.
Pour small ladles of the mixture in a shallow, heated Teflon pan, shake it so it covers the entire bottom and fry on both sides. You have to be careful not to fry them too long, nor leave them raw. The color you need to obtain is a light brown one.
Prepare 2 large plates, a jar of jam and the feta cheese ahead of time. Once a pancake is ready, put it in one of the plates, smear it with a little jam, sprinkle with grated feta cheese and wrap it into a roll.
Place it in the other plate with the edge facing down so it doesn't unroll. Do this for all the other pancakes.
Hands down, the pancake is the queen of desserts! When made according to this recipe, you simply won't resist licking your fingers!
