How to make
Clean the fish and cut it into large fillets. Wash it and dry it. If you are using a salted cod, you should soak it in water for 12 to 24 hours and change the water periodically.
Grease the bottom of a baking pan with olive oil and place the fillets skin side down. Grease each one with a teaspoon of fat. If you have chosen to cook fresh cod, add a little salt to the fillets. When pre-salted and then soaked, it is not necessary.
Place the fish in a preheated 390°F (200 degree) oven for 12-13 minutes. It is important to stick to this time, in order to have juicy and tender fish.
While baking, finely chop the parsley and garlic, mix them with olive oil, lemon juice, salt and ground almonds.
Spread the pesto on the oven-baked fish fillets and serve them warm.
Garnish the baked fish with a slice of lemon and if desired, a fresh salad.
