How to make
For this classic cake in a bowl, sift the flour and add the vanilla sugar, baking powder and a pinch of salt, stir and set it aside.
In another bowl, beat the eggs.
Add the sugar to them in stages, add the oil and yoghurt and mix everything at all times with a mixer.
Add the flour mixture and mix gently with a spatula until you have a smooth mixture.
Pour the sponge cake batter into a baking pan measuring 10x10″ (26x26 cm), pre-greased with oil and lined with baking paper.
Shake the baking pan to level the mixture and place it in a preheated oven at 360°F (180 degrees).
Bake the airy vanilla cake for about 35 minutes.
