How to make
Wash well cleaned carp. Season it with salt on all sides. Peel an onion and finely chop it.
Heat the oil and stew the onions. Add the peeled and sliced carrots.
Once the vegetables have softened, add the peeled and sliced tomatoes and mushrooms. Stir and cook them for 3-4 minutes.
Season with salt, black pepper and add sugar and paprika. Stir and add 1/2 cup of hot water. Add the tomato puree. Stir until everything is mixed well.
Fill the belly of the carp with the prepared mixture and pour the rest into the baking tray. Sprinkle the fish with finely chopped garlic.
Bake the carp in a preheated oven.
Once its surface forms a crispy crust, carefully turn it over and bake it on the other side until it aquires a golden brown color. Sprinkle it with fresh parsley.
