How to make
In a deep bowl mix the sugar, cocoa, coffee and vanilla. Add olive oil and stir. Then to this mixture add the beaten eggs, flour and baking powder.
Continue mixing them until a smooth dough is obtained. Leave it in the refrigerator for 40 minutes.
Put the powdered sugar in a deep bowl. From the chilled dough, form balls with your hands, which you then need to roll in the sugar. Arrange them in a tray lined with baking paper. Bake the cookies for about 12 minutes (or until they crinkle) in a preheated oven at 320°F (160 degrees).
Note: In order for the cookies to turn white and crinkle well, it is necessary to take them out of the bowl with the powdered sugar just before putting them in the oven, because otherwise the sugar is absorbed very quickly by the dough and that way the snowy effect is lost.
