Ingredients

  • black beans - 3.2 oz (90 g)
  • minced meat - 1 lb (450 g)
  • onions - 1 onion
  • tomatoes - 1 pc.
  • jalapeno - 2 - 3 fresh peppers
  • tex mex spice - 1 tbsp. with a tip
  • cumin - 1 - 2 pinches
  • black pepper - 2 pinches
  • paprika - 1 tsp.
  • garlic powder - 2 pinches
  • oil - 3 1/3 tbsp (50 ml)
  • vegetable broth - about 4 1/2 tbsp (70 ml) or water
  • tortilla wraps - 1 package - 10 medium - sized
  • yellow cheese - 7 oz (200 g) for sprinkling

How to make

Soak the black beans for a few hours or overnight in cold water, then strain them, add new water - 4 large parts of beans. Boil until they soften and are fully cooked and strain them.

Chop the onion and fry it in oil. Add the tomatoes - peeled and grated and after two minutes add the minced meat.

Pour a little vegetable broth or water, add spices and salt and stir until the liquid evaporates and the minced meat is ready. Stirring is important, not only so that the products do not burn, but also so that the minced meat does not become lumpy.

Add the black beans to everything else, stir briefly and remove from the heat.

You can cut Jalapeno peppers into circles and serve them fresh or lightly roasted over high heat with a little olive oil.

Take the tortilla wraps out of the package and warm them one by one briefly in a pan with a non-stick bottom. Of course, it is best to make homemade tortilla wraps. The condition is to serve the flat wraps and the filling warm at the same time.

Serve the fajita stuffing in a large bowl with hot peppers and in a separate bowl - the grated yellow cheese. You can also add a bowl of fresh salad leaves. That way everyone at the table will wrap their own fajita and put as much of everything as they like.
