In a large bowl, squash the two types of cheese with the olive oil. Cut the onions and garlic as fine as possible and add them to the cheeses. Add the walnuts, breadcrumbs, pepper and other green spices to taste.
Mix everything very well. With greased hands, form balls, arrange them in a tray covered with baking paper and bake them in a preheated oven at 480°F (250 °C) for 5-10 minutes.
