Ingredients

  • rabbit meat - with bones
  • spinach - 7 oz (200 g)
  • carrots - 1 pc.
  • onion - 1 onion
  • rice - 2 tbsp.
  • olive oil - 5 tbsp.
  • mint
  • salt
  • black pepper
  • for the thickener
  • egg yolks - 1 pc.
  • yogurt - 2 tbsp.

How to make

Boil the meat in salted water. Debone and cut the meat into small pieces. Cut the carrots and onions into small pieces.

Heat the olive oil and let the vegetables fry briefly.

Add the chopped spinach and meat. Cover the pot and stew for 5 minutes. Pour the warm rabbit broth. Once the soup boils, add two tablespoons of rice.

Cook until the rice is ready. Season with chopped mint. Remove the pot from the heat.

In a bowl, beat an egg yolk with two tablespoons of yogurt with a wire whisk.

Pour a ladle of the hot soup, stir and pour the thickener back into the pot. Sprinkle the rabbit soup with a pinch of black pepper. Enjoy!
