Cut the potatoes and zucchini into small cubes. Cut the onions into crescents and fry in half the olive oil. Add vegetables and let them sauté for about 15 minutes, then add the shrimp.
Remove from the heat, drain the liquid and add the beaten eggs to the fried products. Season with spices, heat the second half of the olive oil in a pan and put the mixture in to fry.
Press down on the tortilla with a spatula. Fry for about 2-3 minutes on each side.
