Syrup: From the sugar, water and lemon juice boil a thick syrup and leave it to cool.
The kadaif is stretched to separate the fibers. Melt the butter in a small pan. Put half of the kadaif and press it down well to absorb the butter. Put the cheese on it and cover it with the remaining raw kadaif. It is pressed lightly.
Cook it on the stove until it aquires a golden color, then turn it on the other side with a flat plate.
Pour the cooled syrup over the fried kadaif. Cover it for a few minutes, until the syrup is completely absorbed.
Serve it hot, sprinkled with pistachios and the addition of a scoop of ice cream or yogurt.
