How to make
Wash and boil the rice in slightly salted water, without any oil. It must boil but remain sticky (should get a purple colored mixture with an incredible flavor, from the black rice).
Wash with cold water and pour it into a bowl, add 1 whole egg and 2 egg yolks, the cheeses, honey, walnuts and spices. Knead well and make balls the size of a walnut.
Roll in breadcrumbs or parmesan, crumb in the well-beaten eggs and fry until golden. Serve them with mustard sauce and garnish of your choice.
