How to make
Dissolve the yeast in the cool milk with 2 pinches of sugar and 2-3 tablespoons flour, stir well and leave it to rise for 30 minutes in a warm place.
Separately, beat the eggs, add the softened butter and add the yeast, crumbled feta cheese and while gradually adding the flour, knead a soft and smooth dough that you can roll out.
Leave it to rise well for about 2 hours, then divide it into 2 parts. Mix one with the paprika. Roll out sheets from both types of dough and cut out crackers of the desired shapes. Smear them with beaten egg yolk and sprinkle with cumin, sesame or poppy seeds.
Arrange them on a tray with baking paper. Leave them to sit for 15 minutes and then put them to bake in a preheated 390°F (200 °C) oven for 15 minutes.
