"Morning temptation for all who have given up animal products"

Ingredients

  • bananas - 1 pc. (ripened and large)
  • baking powder - 1 tsp.
  • salt - a pinch
  • sugar - 4 tbsp.
  • oil - 3 tbsp.
  • soy milk - 1/2 cup (or water/almond milk)
  • cinnamon - 1 tsp.
  • vanilla
  • flour - 1 cup
  • vegetable oil - for greasing

How to make

Mix the dry ingredients in a bowl - flour, salt, sugar and baking powder.

Separately blend the banana with the cinnamon, a little soy milk and flavor it with vanilla.

Then add the remaining milk and 3 tbsp. oil, mix and pour the dry ingredients. Mix the mixture until it's smooth and let it rest for about 15 minutes.

Lightly grease a pan with a non-stick coating and pour a not fully full ladle of the mixture. Bake the pancakes on both sides.

Garnish with jam, honey, powdered sugar or a savory topping, if desired.
