Put the sugar and water on the heated hob in a suitable saucepan and let it caramelize. It is not necessary to stir it, it is enough to shake the saucepan from time to time.
When the caramel starts to change its color from golden to pale brown, pour the milk. Stir until the caramel melts into the milk. Add the cinnamon and simmer the milk for 10 minutes until it thickens and add the walnuts. Remove it from heat and allow it to cool.
Whip the cream thoroughly. Add the above mixture to it and stir until they mix completely. Pour the mixture into a suitable container and put in the freezer to freeze.
The homemade ice cream is blended several times to avoid the formation of large crystals.
