How to make
Boil the beef tongue in a pressure cooker for 1 hour along with an onion, bay leaf, a few grains of allspice, black pepper and salt.
Before adding the spices, it is good to change the water. Once it has boiled, peel the tongue and cut into slices.
The mushrooms are washed and cut. Stew them for 10 minutes in a pan with butter.
In a glass pot, mix the mushrooms and tongue. Season them with black pepper and bay leaf. Add 1 cup of strained broth from the tongue. Bake them for 40 minutes in an oven at 390°F (200°C).
The lid is removed for the last 10 minutes.
