Fried eggplant with garlic and vinegar, which is a great beer appetizer.
Wash the eggplant and cut it into circles. Put it in a bowl and salt. Mix and leave for half an hour. Squeeze the bitter water out and roll each piece in flour. Arrange on a plate, side by side, slightly overlapping at one end. Leave for another half hour.
Heat a frying pan with oil and fry the eggplant on both sides until golden. Remove and place the fried eggplant in a suitable dish.
In a small bowl, place the oil, vinegar, salt and garlic, which you have previously cut into small pieces. Stir and pour over the eggplant. Sprinkle with freshly ground black pepper and serve the garlic eggplant.
