How to make
Boil the chicken drumsticks with a little salt and debone them.
For the sauce: Melt the butter in a saucepan and sauté the finely chopped onion. Add the flour and fry it for a minute.
Then gradually add 3 cups of the chicken broth, while stirring constantly.
Once the sauce is thickens, the pre-mixed cold fresh milk with one yolk is added to it in a thin stream. Add the boiled drumsticks.
Cook over low heat for a few minutes and stir. Season the fricassee with lemon juice, salt and black pepper.
