Ingredients

  • fresh potatoes - 2.2 lb (1 kg)
  • rice - 1 cup
  • oil - 3 1/3 tbsp (50 ml)
  • spring onion - 2 stalks
  • green peppers - 1 pc.
  • tomatoes - 1 pc.
  • paprika - 1 tsp.
  • salt - by taste
  • black pepper - by taste
  • fresh mint - 7 - 8 leaves

How to make

Peel the potatoes and cut them into small cubes. Heat the oil in a pot, add the potatoes and fry them for about 5 minutes.

Add the chopped spring onions and green peppers, continue to fry until the vegetables have slightly softened. Add the peeled and grated tomato, paprika and stir.

Pour 5 cups of warm water and once it starts boiling, reduce to low heat, put the lid on the pot and let it simmer for about 5 minutes. After that add the well-washed and strained rice and stir.

Let the stew simmer, with the lid on, until the rice is fully cooked.

Add as much salt as you like, sprinkle with chopped mint and as much black pepper as you like. Stir and remove the stew from the heat, leave with the lid on and let it simmer for about 10 minutes before serving it.
