How to make
Preheat the oven to 390°F (200 degrees). Peel and grate the apples on a coarse side of a grater.
Separately, mix the sifted flour with the cinnamon, baking powder and vanilla.
In a bowl, beat the eggs with the sugar with a mixer, until it forms a fluffy cream. Gradually, add the oil in a stream in the bowl, while constantly stirring.
Add the mixed dry ingredients in stages, while stirring constantly with a spatula.
Finally, add the grated apples and stir.
Pour the mixture into a greased cake pan and place the pan in the preheated oven.
Bake for about 40-45 minutes, until it's baked. Check to see if it's fully baked with a wooden toothpick. Remove the cake pan from the oven and leave it to cool for 10 minutes.
Turn the cake form onto a suitable dish to remove the apple cake from the cake form and sprinkle it with powdered sugar. What you get is an aromatic, soft and a very tasty sponge cake!
