How to make
Preheat the oven. Cut the eggplant into 2 halves and place them in a tray covered with foil, skin side up. Bake for 20 minutes.
Meanwhile, heat 4 tbsp. of olive oil and fry the onions. Add garlic, season with salt and pepper.
Carve the inside of the eggplants and mash them with the onion and garlic.
Add the lemon juice and the remaining olive oil, if necessary season with more salt and pepper. Garnish with coriander and serve.
