How to make
We wash the eggplants and remove their stalks.
Cut them into circles to your desired size. Salt the eggplant wheels and transfer them to a colander.
We leave them for about 30 minutes, so they release their black color.
Put a Teflon pan on the stove and add 1-2 tablespoons of oil.
Put flour on a plate.
Roll each wheel in flour and fry until golden.
It is good that the pan does not stay completely dry, when this happens, add 1 tbsp. oil.
Garnish the fried eggplant with a trickle of vinegar, grated or pressed garlic, and sprinkle with finely chopped fresh parsley!
