How to make
Cut the onion into strips (crescents), peel and cut the potatoes into small cubes as for moussaka.
Heat the oil and add the chopped vegetables, fry until golden brown or until the potatoes are cooked, over high heat.
Add salt to taste and stir, roughly crush the cheese and add it.
Crack the eggs mix them in and after the egg white begins to turn white, stir and fry until the eggs are slightly runny (do not burn the eggs).
Before serving, sprinkle with paprika to taste, and serve with your favorite salad.
