"A favorite salad that we make when we feel like eating something healthy."

Ingredients

  • quinoa - 1/3 of a cup. (boiled)
  • avocado - 1/2 an avocado
  • red peppers - 1 pc.
  • tomatoes - 1 pc.
  • spinach - a handful
  • carrots - 1 pc. (small)
  • olives - 6 pcs.
  • himalayan salt - a pinch
  • olive oil - 1 tsp.
  • hot peppers - optionally dried
  • spicy paprika - optional

How to make

Wash the quinoa with lukewarm water. The quinoa is quite small and to drain it, we need a very fine strainer.

Boil the quinoa for about 10-15 minutes, boiling one serving of quinoa with 2 servings of water.

While the quinoa is cooking, in a separate bowl, chop the avocado, tomato, pepper, carrot and spinach for our healthy vegetable salad.

Add the olives, olive oil and other spices.

When the quinoa is ready, add it to the vegetables and mix them up.

We're ready :)

This quinoa, spinach and avocado salad is quick, easy, healthy, vitamin-rich and also a very, very tasty salad, especially if we add something spicy to it :)
