How to make
Clean the meat, and if needed, give it a good rub with salt and black pepper. Make deep cuts in the meat with a knife and tuck peeled garlic cloves, oblong pieces of carrots and pickles in the slits. If you still have leftover vegetables, spread them in the oiled pan around and under the meat.
Brush the pork with plenty of oil and pour the brandy in. Cover it with foil and leave it in the refrigerator for 1 night. The next day, put it to bake at 340°F (170 °C) for 2 hours in foil. Once ready, remove the foil and strain the sauce. Bake the meat for a few minutes.
For the sauce, heat a little oil in a pan on the stove and fry 2-3 tablespoons of flour. Dilute it with the strained roasting sauce, stir it constantly for a few minutes. Season the sauce with salt and pepper.
Serve each portion of sliced pork fillet, topped with a few tablespoons of sauce.
