"Do you know what would happen if you substituted potatoes with zucchini in your moussaka recipe? An even yummier moussaka!"

Ingredients

  • zucchini - 3
  • mince - 17.5 oz (500 g) beef, or a mixture
  • rice - 1 cup
  • tomatoes - 1/2 can of tomatoes
  • oil - 2/5 cup (100 ml)
  • spearmint
  • salt
  • onions - 3 sprigs fresh, or one head
  • yoghurt - 1 cup
  • eggs - 2 - 3
  • flour - 2 tbsp
  • black pepper - 1 tbsp

How to make

Heat oil in a pot and fry the chopped onion, then add the minced meat. Stir until it breaks apart and add the paprika, the washed rice, stir quickly and top with 1 cup of warm water. Flavor with spices.

Cut the pre-cleaned zucchini into slices. In a greased rectangular tray, arrange a layer of zucchini, then part of the mixture with the minced meat and tomatoes. Then arrange zucchini again, the rice with the mince and the sliced tomato.

Repeat this procedure once more and finish off with zucchini. Top with about 1 1/2 cups of hot water. Put the moussaka with zucchini to bake in a preheated 360°F (180 °C) oven, until the liquid is absorbed.

For the topping, beat the eggs, yoghurt and flour. Pour it over the almost ready moussaka and bake until it crisps. You can decorate it with sliced cucumber and yoghurt.
