How to make
Rub the flour, salt and butter, which you've cut into pieces, between the palms of your hands until they turn into a granular mass. Add the water to the mixture and knead it energetically. Form the resulting dough into a ball.
Flatten it with your palm and roll it into a ball again. Repeat this three times, then let the dough rest in the fridge. Meanwhile, cut the ham into pieces and beat the eggs in a deep bowl with the cream or milk, salt and pepper.
Roll out the dough to a sheet 1/8 (3 mm) thick, place it in a baking dish with a diameter of about 8″ (20 cm), pierce it with a fork down through the bottom, sprinkle it with bits of ham and then pour the mixture of eggs and milk on.
Bake the pastry for about 30 minutes at a high temperature and serve it hot.
