"A very interesting spin on our favorite phyllo pastry"

Ingredients

  • eggs - 7
  • salt - 1 - 2 pinches
  • flour - for a soft dough
  • butter
  • feta cheese
  • water - salted and sweetened, separately

How to make

Beat the eggs lightly with the salt and add the flour, knead into a soft dough very well, without putting water in. Divide the dough into 14 balls and let them rest for about 15 minutes. Roll out each ball into a sheet the size of the tray in which you will bake the phyllo pastry.

Arrange the sheets on top of each other and put clean paper between them, so they do not stick. Boil water in a shallow and wide pot with sugar, and another one - with salted but cold water. Place the first phyllo pastry sheet in a greased tray and brush it with the melted butter.

Dip the second phyllo pastry sheet for a few seconds in the hot sweet water, and then immediately in the cold. Drain it and put it on the first phyllo pastry sheet. Brush it with melted butter also and repeat with all the other sheets.

Every 3-4 sheets, sprinkle with plenty of feta cheese. Put the last sheet in without treating it like the others. Put the phyllo pastry to bake in a preheated moderate oven until browned.

Sprinkle the finished phyllo pastry with water. Make this in the same way if using ready-made Turkish phyllo pastry.
