How to make
Tenderize the steak, fry it lightly on one side. Salt it. The other side is pre-salted and crumbed in flour, then fried until browned.
Remove the steak from the pan. Put the remaining flour to cook in the oil until darkened. Quench it with wine.
When evaporated, add water and salt and boil. The resulting sauce is served with the steak.
