Ingredients

  • rabbit - 1 whole, with the liver
  • mushrooms - 21 oz (600 g)
  • onions - 1 head
  • garlic - 1/2 head
  • rice - 4/5 cup (200 g)
  • oil - 1/2 cup
  • allspice - 2 grains
  • savory - to taste
  • white wine - 1 cup
  • butter - 2/5 cup (100 g)
  • processed cheese - 7 oz (200 g) smoked
  • salt - to taste
  • black pepper - 1 tsp, ground

How to make

Take the whole rabbit and clean it. Put the liver to boil, then cut it into pieces. Heat the oil and fry the chopped onion, garlic and chopped into smaller pieces mushrooms.

Add the pre-washed rice, top with 1 cup hot water, salt and pour the liver in. Once the rice absorbs the water, add black pepper, wine, sliced processed cheese. Simmer for 1-2 minutes while stirring and add the savory and allspice.

Fill the rabbit with the prepared stuffing and sew it up. Put the rabbit in a buttered tray, rub it with plenty of butter and pour a cup of hot water into the tray. Cover it with foil and place the stuffed rabbit to bake in a preheated 390°F (200 °C) oven for 2 and a half hours.

Then remove the foil, rub with butter once more and bake until it gets a nice tan.
