Ingredients

  • pork - 17.5 oz (500 g) + 17.5 oz (500 g) steaks
  • black pudding - 10.5 oz (300 g)
  • bacon - 9 oz (250 g)
  • onions - 4 heads
  • mushrooms - 9 oz (250 g)
  • sauerkraut - a few leaves
  • mustard - 3 tbsp
  • savory - 1 tsp
  • marjoram - 1 tsp
  • white wine - 1 cup
  • chicken broth - 4/5 cup (200 ml)
  • tomato paste - 3 tbsp
  • salt
  • black pepper
  • oil - about 2/5 cup (100 ml)

How to make

Cut 1/2 of the bacon into small pieces. Cut 17.5 oz (500 g) of pork into coarse chunks and fry them in the bacon and fat which it has released. Then fry the steaks on both sides and if necessary, add a little more fat.

Put the fried meat in a pot with the coarsely chopped black pudding and mix them with salt, black pepper, mustard, savory and marjoram.

Add the cleaned whole mushrooms, coarsely chopped onion and coarsely chopped leaves of sauerkraut. Lightly mix and some more spices to taste. Dissolve the tomato paste in the warm broth and pour it in the pot. Add the wine and close tightly with a lid.

If necessary, plug it shut with dough. Put the pot to bake for 3-4 hours in a moderate oven.
