Ingredients

  • hen - 1. with giblets
  • garlic - 1 head
  • lemons - 6.
  • olives - 2 oz (50 g) (black, thin)
  • cheese - 3 oz (90 grams) (4 slices)
  • olive oil - 1/2 cup
  • breadcrumbs - 2 cups
  • oregano
  • cloves
  • black pepper
  • salt
  • cinnamon

How to make

Squeeze lemons, saving 1 half. Rub the bird with lemon and salt and leave for at least 30 minutes cool.

Insides of the chicken are cut finely and fried in a little olive oil. When evenly golden brown, add spices to taste, and 1-2 tablespoons lemon juice. Mix and add the bread crumbs and olives.

To the mixture of the chicken giblets, add grated cheese. Stuff the chicken and sew it. Grease the stuffed chicken with olive oil, top it with the rest of the lemon juice and put it in a very hot oven for 1 hour.

Occasionally, add sauce separated from the baking.
