"Cake with breadcrumbs and no flour - Greek Karidopita."

Ingredients

  • eggs - 6
  • sugar - 1 cup (250 ml)
  • breadcrumbs - 1 cup (250 ml)
  • baking powder - 1.5 tsp.
  • cinnamon - 2 tsp.
  • cloves - 1/4 tsp. powder
  • walnuts - 1.5 cups crushed
  • For the syrup
  • sugar - 1.1 lb (500 g)
  • water - 3 cups
  • lemon juice - 1 tbsp.
  • cognac - 3 tbsp.

How to make

Put the eggs and sugar in a large bowl and beat with a mixer at the highest speed for 15 minutes. Mix the breadcrumbs, baking powder, cinnamon and cloves in a separate bowl.

After mixing the eggs and sugar well, add the breadcrumbs and the other ingredients a little at a time. Stir the mixture slowly with a spoon. Then add the walnuts, which we have crushed into large pieces in advance, and mix.

Grease a 10″ (25 cm) diameter baking pan with butter and pour the mixture into it. Bake the karidopita at 350°F (175°C) for about 30 - 35 minutes.

While baking the Greek cake, prepare the syrup. Put all the ingredients in a saucepan except the cognac. Bring them to a boil and let the syrup cool. Add the cognac and mix.

Take out the baked karidopita and carefully pour it with the syrup using a spoon, first along the edges and then all over. We do not pour the syrup all at once, because the pita will become soggy and will no longer be fluffy.

Leave the syrup cake to cool completely, then we turn it into a suitable container and serve the magical cake.
