How to make
Cut the fresh homemade sausage into small pieces. Heat the oil in a pot and sauté the sausage pieces. Transfer to a plate and add the chopped leeks to the oil. Let it stew until completely soft.
Mix with 1 teaspoon paprika and add the cleaned and chopped potatoes. Stew them for 10 minutes, add a little hot water to cover it a bit and let it sauté for another 10 minutes with the bay leaf.
Add the mashed tomatoes and sausage pieces. Allow to cook until the liquid evaporates a bit. Finally flavor with the spices.
Serve this dish with freshly chopped parsley and a crushed chili pepper if desired.
