How to make
Dissolve the yeast in the warm water with a little flour and sugar. After it activates, add it to the flour with the remaining sugar and salt, egg, olive oil and knead a smooth dough. Allow to rise.
Divide the dough into 12 (for larger buns) or 24 balls (for smaller buns). Allow the balls to rest for another 20 minutes. From each ball, make a long wick, fold it in half and twist. Smear thus prepared bagels with sweet syrup and roll them in sesame seeds.
For the syrup, dissolve the pekmez in water. If you do not have pekmez, you can make a runny caramel from caramelized sugar and water.
Arrange the simit in a tray with baking paper and allow to rise for half an hour, cover them with a towel.
Put them to bake at a moderate temperature for 20 minutes or until nicely browned.
