How to make
Cut the eggplants length-wise, salt them and let them drain, then wash them with warm water and fry them in hot oil.
Arrange them on a plate, coat each piece of eggplant with feta cheese to which you've added pressed garlic and chopped parsley. Put a round tomato slice on top, grate cheese and bake for a bit in the microwave or on a grill.
Once ready, put some coarsely grated carrot and parsley on top. Enjoy!
