"When the fan is a pork one, it might not cool you off but it will fill you up nicely."

Ingredients

  • pork tenderloin - 1 whole piece
  • processed cheese - 7 oz (200 g)
  • cheese - 7 oz (200 g)
  • bacon - 7 oz (200 g)
  • marinade
  • red wine - 1/2 cup
  • mustard - 2 tablespoons
  • honey - 2 tablespoons
  • soy sauce - 1/4 cup
  • oil - 4 - 5 tablespoons
  • lemons - the juice of 1/2
  • black pepper
  • cumin
  • thyme

How to make

Stir together all the products for the marinade.

Make 3/4″ (2 cm) wide cuts in the meat but not all the way through, in order to make it like a fan. Smear it all over with the marinade, sprinkle with spices. Cover with foil and put in the fridge for 4-5 hours, best if overnight.

Chop the processed cheese, cheese and bacon into pieces, as many as the cuts on the meat. Take the meat out of the marinade.

I chopped the processed cheese into thin round slices and put 3 in each cut. Put bacon in between the processed cheese and cheese.

Pour the marinade on top, cover with aluminum foil and put to bake in a preheated 390°F (200 °C) oven. Bake at this temperature for 30 min., then lower to 360°F (180 °C) for 1 hour.

Uncover the foil and leave to crisp on top.

Notes: You can strain the released sauce and serve it with the meat. I didn't add salt because it takes in plenty from the soy sauce, processed cheese and cheese.
