Ingredients

  • meat - 21 oz (600 g) of pork, chicken or a mixture of both
  • onions - 1 large head
  • zucchini - 2, small and tender
  • mushrooms - 7 oz (200 g) fresh
  • carrots - 2
  • potatoes - 6, fresh and small in size
  • oil - for frying
  • salt - to taste
  • soy sauce - 1 tablespoon
  • black pepper - to taste
  • cheese - for sprinkling the meat

How to make

To make this saj faster you'll need a griddle pan or plain Teflon pan.

Cut the meat into thin steaks or small cubes, wash and dry it, pour on the soy sauce, sprinkle black pepper to taste, leave aside for no less than 30 min.

Cut the vegetables separately, the onions into crescents, peel the zucchini thinly and cut into slices, cut the carrots into thin slices, the mushrooms into quarters.

Put the mushrooms into a pot with water, vinegar and salt, boil 5 min., strain and throw out the water, leave the mushrooms aside.

Pour a little oil into the pan, leave it to heat up well, add the meat and braise on all sides to crisp, that way the meat becomes juicy. Lower the heat and pour in 1/2 cup water (white wine) and cook, while stirring periodically.

Once the meat is left to cook in just oil, add a small part of the chopped onions and mushrooms and braise briefly. Your vegetables need to look baked but also crunchy. You have to watch for that moment, your veggies must not be soft.

Remove the prepared meat, mushrooms and onions from the pan, place in the middle of the oiled cold saj in a pile. Continue by baking the veggies in the pan, add a little oil if needed and first crisp the onions (as mentioned needs to look baked and crunchy), place onions in a bowl - you'll be placing all of the baked veggies in it, continue with the zucchini and carrots, salt them to taste, place them in the saj in a circle around the meat.

Peel the potatoes, cut them into strips for frying, pour in extra oil into the pan and fry until ready, place in a separate bowl and salt them to taste. Arrange in a circle around the veggies. Place the saj in a cold oven, turn it on to 360°F (180 °C). Once the products in the saj begin to warm up, grate the cheese over the meat only and bake until cheese softens. Sprinkle the prepared saj with finely chopped parsley or stalks of green onions, serve.

Separately, you can fry eggs sunny side up and arrange them on top, or slices of tomatoes - according to taste for a richer saj.

Personally, my family prefers it with fresh salad served separately.
