How to make
Beat the butter and sugar into foam and add the lemon rind and vanilla. While whipping, add the potato and wheat flours in, as well as the salt, baking powder and eggs.
Then, add the ground almonds, pre-soaked in, and drained of the rum, and then the finely chopped candied fruit. Chop the cherries also and add them to the mix.
Start adding the flour and rum and mix until homogeneous. Pour the mixture into a greased cake form. Bake in a preheated moderate oven for about 40 minutes.
