Ingredients

  • lamb shoulder - 2.2 lb (1 kg)
  • bananas - 1 chopped
  • coconut milk - 1 cup
  • bay leaf - 1
  • onions - 1 cup wholesale cut
  • garlic - 3 cloves chopped
  • curry - 2 tablespoons
  • cumin - 2 1/2 tablespoons powdered
  • apples - first cleaned of seeds, sliced and salted
  • pepper - to taste freshly ground
  • peppers - 1 chopped 'jalapeno' pepper without seeds
  • tomatoes - 1 sliced
  • flour - 2 tbsp
  • coriander - 4 - 5 leaves for decoration

How to make

Trim most of the fat in the meat and cut it into cubes with a thickness of 2-3 cm. Put all ingredients in a pressure cooker. Mix them well. Close the lid. Cook for 20 minutes.

Then uncompress and open the pan as per the instructions of the manufacturer. Pour the meat into a large bowl. Decorate with coriander.

You can serve with grated coconut, peanut, chutney and rice with raisins (see recipe) for garnish. Cooking it in a pot will take about 1-1 1/2 hours.
