Tenderize the meat. Squeeze the garlic through a press.
Smear each steak with the garlic juice, then sprinkle on both sides with salt and black pepper.
Leave them to rest at room temperature for 20 min.
Fry in heated oil, crisp on both sides on high heat so that the meat gains a crust and juice doesn't leak out. Once crisped, lower the heat and fry the meat until softened.
