If you've ever been to the Southwest then you've certainly heard the term Tex-Mex cuisine. As you might have figured out, it's a shortened version of "Texas-Mexico" and in essence a fusion of American and Mexican cuisine.

But the fact is that term originated from the railroad built between the States and Mexico and additionally, Mexican products and spices definitely prevail in Tex-Mex cuisine.

They have even made former Texas governor and US President George Bush fall in love with Tex-Mex cuisine and regularly eat it within the walls of the White House.

Nothing surprising there, because besides incredibly aromatic and delicious, it is also filling. Here at 2 of its biggest specialties and how you can make them quickly and easily yourself:

quesadillas

Quesadillas

Ingredients: 2 cups corn flour, 3 tbsp oil, 3 teaspoons butter, 1 teaspoon salt, 5.5 oz sausage, 1/2 onion head, 5 eggs, 10 slices of cheese.

Preparation: In a bowl combine the flour, salt and butter and gradually begin pouring in water until you get an elastic dough.

Leave it for 30 min., then make 18 to 20 balls, the size of a walnut, from it. Put each ball between 2 sheets of baking paper and roll it out until you get a tortilla about 3 1/4″ (8.5 cm) in diameter.

Place the prepared tortillas in a heated Teflon pan and roast them lightly on both sides. Put a slice of cheese in half of them and fold them in half. Braise the separately chopped sausage and onions in the oil.

Mix the eggs with a pinch of salt in a bowl and add them to the sausage. Once the filling is ready, put it in the tortillas without cheese and fold them. Grill all of the folded quesadillas for about 2 min. on both sides and then serve.

Burritos

Ingredients: 8 tortillas prepared in the way described in the previous recipe, 1 carrot, 1 onion, 1 garlic clove, 1 red pepper, 1 can of corn, 1 can of ripe beans, 1 teaspoon thyme, 1 teaspoon cumin, a little oil, salt and black pepper to taste.

Preparation: Cut all of the raw ingredients finely, crush the garlic. Braise them in a little oil and once ready add the beans, corn and spices to them and then saute for about another 5 min. Fill the premade tortillas with this mixture and wrap them in a cylinder shape.
