From all the nuts, almonds are the most widely used in cooking, especially for making chocolate desserts, cakes, candies and pastries. Almonds can also be used to make dough, which is very suitable for biscuits and cakes.
Here is a sample recipe for making almond dough.
Required products:
9 oz (250 g) raw almonds
3.5 oz (100 g) powdered sugar
3 tbsp. of water
1 egg white
Put the raw almonds in a pot of boiling water and let them simmer for no more than 60 seconds.
Pour the almonds into a colander and pour cold water over them until they cool down.
Allow the almonds to drain onto kitchen paper.
Squeeze the almonds between your fingers and remove their skin. Leave the nuts aside to dry well.
Grind the nuts until they turn into a fine, flour-like powder. Mix the resulting almond flour with powdered sugar. Add the egg white and water. Stir with a fork until it turns into a ball. If the dough is too sticky, add more ground almonds until the dough stops sticking to your fingers.
You can store the dough in the refrigerator by wrapping it in cling film. This way it can last more than a week.
