When drying fruits there are some things that we need to know and follow in order to have good results.
The first is hygiene. It is very important that the fruit, utensils and boards are well washed and that everything is perfectly clean. You can use gloves to pick up the fruit or with a tong. It can be wooden, metal or plastic. Potential dirt can lead to the contamination and loss of everything that has been dried.
Clean the plums. They are washed very well and we have selected ones that are in good shape, uninjured fruit and of course well ripened. If there are rotten stains, they are removed until there aren't any left.
Cutting. They are usually cut in half and the seed is removed. You can leave them intact, but this will take longer to dry them. It is advisable to blanch them first to soften the skin and make them easier to dry.
Drying. Arrange them in trays with the skin facing down and by leaving a small space between them. The drying time varies depending on the fruit, but is from 8 to 15 hours. From 100 grams of fresh plums, 16 grams of dried ones are obtained.
Storage. It’s best to store them in airtight bags or jars. Maybe in paper bags. Moisture is a potential threat to our dried plums, so it is important to store them in a dry and ventilated place.
