The most commonly used cream for decorating muffins and cupcakes is butter cream. It is light, fluffy, and its consistency is ideal for piping it out with a decorating tube. Butter cream does not require much effort to make and with it the variations for decorating muffins, cakes and all kinds of pastries are countless. One of the biggest advantages of butter cream for muffin decoration is that it doesn't taste heavy at all.
Recipe for butter cream for about 4 cups of cream:
Necessary products:
2 tea cups butter or margarine
8 ml. liquid vanilla - essence
7 tea cups powdered sugar
60 ml. milk
*If you want the cream to be thicker, increase the amount of powdered sugar and if you want it to be thinner, add more milk.
Method of preparation:
In a deep bowl, beat the butter with a mixer (previously it needs to be slightly softened, but not completely melted) and the vanilla essence. Then add the milk and powdered sugar and mix very well until the mixture is completely homogenous.
The finished cream can be used immediately, but if you need it later on, you need to cover the bowl tightly with household stretch film to prevent the cream from drying out. Covered in this way and left in the refrigerator, the cream can be stored for up to 5 days without spoiling or losing its taste. It is even possible to deep freeze it in a chamber for longer storage of the cream.
Optionally, you can add different food colors to the cream to color it. Gel-like food paints are most suitable, as the cream can lump up when using liquid confectionery paints.
