The best things are illegal, immoral or covered in melted chocolate . Jokes aside, there are many desserts that are made with melted chocolate and many novice cooks have wondered how to melt chocolate in a water bath .
The first and most important rule is not to be tempted to eat chocolate before melting it.
Second, never place the bowl of chocolate directly onto the stove. If you put the chocolate in a metal container and put it on the stove, the chocolate will certainly bake, burn but certainly not melt. More or less the same thing happens in the microwave.
To melt chocolate in a water bath, the first step is to break the chocolate into small pieces. Then use a fireproof dish and put the pieces of chocolate in it. It is important that the container is completely clean and free of any moisture or water residue. Set aside the broken bits of chocolate.
Use a deep saucepan and pour two fingers of water into it. Place on the stove and wait for the water to boil. Put the fireproof dish with the pieces of chocolate in the pot of boiling water. The bottom of the chocolate bowl should be dipped in boiling water very lightly, even if it doesn't completely touch it, it is the best way to position it.
This way the chocolate melts in a water bath . Wait a few minutes and you will see how the chocolate begins to melt slowly and evenly. Stir periodically. It is best to do this with a wooden spoon.
If you in a hurry to remove from the heat, that will cause the chocolate to thicken, but if you wait a few more minutes, the chocolate will be completely liquid. You can choose the desired density and when to lift from the stove.
And so - the melted chocolate in a water bath is ready. You can make icing for chocolate sponge cake and chocolate biscuits with it.
