To make homemade vanilla ice cream you will need:
250 ml of cream (35%), 250 ml of fresh milk (3 - 3.7%), 120 g of sugar, 2 pcs. egg yolks, 1 vanilla pod.
Pour the milk and cream into a saucepan. Split the vanilla pod in half lengthwise and scrape out the seeds with a small knife.
Add the pod and seeds to the mixture and place over low heat. While stirring continuously, wait for small bubbles to appear on the surface and immediately remove from the heat.
Remove the vanilla pod. Beat the egg yolks with the sugar with a mixer. They should increase in volume and turn white.
Add the hot milk to the beaten egg yolks. Do this in a few steps. If you pour all at once, the yolks will lump up.
Place over low heat and stir constantly until homemade ice cream mixture begins to thicken.
Allow the mixture to cool at room temperature, covered with cling film. Then pour it into a container with a lid and put it in the freezer. Every half hour, remove the container and stir the vanilla ice cream well.
Stir occasionally until the mass thickens. According to this method, the total freezing time is about 5-6 hours.
In this recipe for vanilla ice cream, the products are heat treated, so it can be stored in the freezer for up to a month.
