Hot peppers usually reach full maturity around the end of September - beginning of October.
The maturity can be determined by their bright color: orange, yellow or red.
Their size can vary from 2-3 to 20-30 centimeters. Only whole ones are selected, without signs of rot or mold.
The peppers you choose must be the same color without stains or mechanical damage.
They are washed under running water, arranged onto kitchen paper or ordinary towels to drain well from the water.
The peppers are placed on a cardboard, paper or wooden surface. Arrange the peppers in one layer, so that the pieces do not touch.
Leave them to dry in a warm place. The room should be well ventilated and dark, since useful substances in peppers are decomposed by ultraviolet radiation.
The readiness of dried peppers is determined visually: the whole vegetables remain shiny, dense to the touch, easily broken when squeezed, but do not crumble.
