Is it possible to make healthy chips without frying using a food dehydrator? Turns out, yes. You will need potatoes, boiling water, lemon juice, vegetable fat, salt, spices to taste.

Here's how to make chips in a food dehydrator.

- Peel the potatoes (optional) and cut with a knife, potato peeler or other device into slices up to 1.5 mm thick;

- This is optional, but you can soak the potato slices in water for a few hours or even overnight to remove excess starch;

- Pour the potatoes with boiling water with lemon juice (about 1 tbsp. per liter of water) and leave them for at least 30 minutes;

- Strain the water, dry the potatoes with paper towels;

- Mix the dried potatoes with a little olive oil and salt to distribute everything evenly. You can instead arrange the potatoes on parchment paper, drizzle with oil and salt on top (not convenient for larger quantities).

- Arrange the potatoes in a single layer on sheets of parchment paper and put them in the dehydrator for 10 hours at a temperature of 71°C.

The finished potato chips turn out to be very interesting - thin, translucent, crispy. It is completely different from classic chips, but no less tasty than it.
